Kimchi Pancakes [김치전]

These kimchi pancakes are not unlike the Japanese pancakes Okonomiyaki. It is great for using up leftover kimchi. These are nice spicy pancakes, when cut into smaller pieces they serve nicely as a side dish. Like Okonomiyaki, you can add to the recipe what you like and make it your own.

  • 125g flour
  • 1 egg
  • 210ml water
  • 300g kimchi
  • 2 spring onions, finely chopped
  • salt to taste
  • 80g minced pork or shrimps

Chop the kimchi into fine pieces and place in a bowl.

Add the pork (if using), spring onions, flour, egg and water to the kimchi (including the kimchi juice). Mix well and let rest for about 10 minutes.

Heat a non-stick pan till almost smoking and add 1 tablespoon of oil. Pour about 1 large ladle of batter into the pan for a normal size pancake.

Alternatively, drop spoonfuls of batter into the pan to make bite-sized pancakes.

Cook for about 1 - 2 minutes, flip it over and cook for another minute or till nicely brown. Finish the batter for the remaining pancakes.
