Sushi

寿司

One of the most popular food of Japan, sushi is actually very easy to make at home.

Ingredients

300 g Japanese short-grained rice
60 ml sushi vinegar mix
Assortment of toppings such as tuna, salmon, tamago, etc

Steps

Wash the rice a few times with cold water until water runs clear. Drain the rice well.
Put the rice with 375 ml water in a pan and bring to a boil.
Once boiling, put a lid on the pan and turn the heat down and let it cook gently until all the water is absorbed.
Turn off the flame and let the rice steamed for 10 minutes.
Put the rice in a sushi oke or a large, shallow non-reactive dish.
Pour the vinegar mixture over the hot, steaming rice and using a wooden rice paddle or spatula, mix it well with short, quick strokes.
Fan the rice while spreading out the rice. Do not use too much force or the rice might get all mushed up.
Now you can use the sushi rice to make different types of sushi such as maki, nigirizushi and temaki. If you are not using the rice immediately, cover with a damp tea towel and use within 2 hours.
