Watercress Soup

西洋菜汤

This soup is quite often made with pork ribs, but it is just as delicious on its own.

Ingredients

1.2 liter chicken stock
2 tbsp light soy sauce
1 tsp sugar
150 g watercress, tough stems removed
2 tsp fresh ginger, finely chopped
3 tbsp spring onions, finely chopped
salt and pepper to taste

Steps

Bring the stock to a simmer in a large pan. Add the soy sauce, sugar, salt and pepper and simmer for 3 minutes.
Add the watercress leaves, ginger and spring onions and continue to simmer the soup for a further 5 minutes.
Check seasoning and serve at once.
