西洋菜汤
This soup is quite often made with pork ribs, but it is just as delicious on its own.
| 1.2 | liter | chicken stock |
| 2 | tbsp | light soy sauce |
| 1 | tsp | sugar |
| 150 | g | watercress, tough stems removed |
| 2 | tsp | fresh ginger, finely chopped |
| 3 | tbsp | spring onions, finely chopped |
| salt and pepper to taste |
| Bring the stock to a simmer in a large pan. Add the soy sauce, sugar, salt and pepper and simmer for 3 minutes. |
| Add the watercress leaves, ginger and spring onions and continue to simmer the soup for a further 5 minutes. |
| Check seasoning and serve at once. |
