In Thai cooking, curry is more than a mixture of dry spices or a yellow powder from a jar. A Thai curry is a careful blend of herbs and spices that is pounded to a paste and forms the basis for a wide range of dishes.

Massaman curry is a southern Thai curry with Muslim influence in that it uses such spices as cinnamon, cloves and cardamom. It has a deep, earthy flavour and is commonly cooked with Beef. Adding contrast to the rich flavours of the curry, we will make a hot and spicy squid salad. This salad has just enough sour undertones to lift the flavours of the meal.

To round up, what better way to end a delicious but spicy meal than a serving of sweet water chestnuts in coconut milk?

Loved this class!  I’ve always enjoyed cooking Thai food, but now I’ve learned the process I need to take in order to get the right balance of flavors.  Making paste from scratch takes time and it so worth it when you taste the final dish.  Fun! Extremely informative and sooo delicious.  Following a recipe is just doesn’t compare.
